Kitchen deep cleaning - equipment
A griddle, a chargrill and a salamander all cook with heat, but they apply it in different ways - a flat plate conducting heat, open grates radiating heat from below, and an overhead grill radiating heat from above. Each suits different jobs, and each throws off grease and carbon differently. Here is how the three differ, how to pick the right heat, and what each means for cleaning.
The short answer
Griddles, chargrills and salamanders are three common pieces of cooking equipment that all use heat but apply it in quite different ways, which is what makes each suited to different jobs. A griddle is a solid, flat metal plate, heated from below, that food sits directly on - so it cooks by conduction, transferring heat through direct, full contact between the plate and the food. This gives even, controllable heat over the whole contact surface, which suits foods that benefit from full contact and even cooking: eggs, pancakes, breakfast items, burgers, onions, and delicate items that need a gentle, even surface. A chargrill (or char-broiler) has open grates or bars over a heat source (gas flame, or heated ceramic or char), with gaps between the bars - so the food sits on the bars over the heat, cooking mainly by radiant heat from below, with direct contact only where it touches the bars. This produces the characteristic grill marks (from the hot bars) and a distinctive flavour, partly because fat and juices drip from the food onto the heat source below and flare or smoke, flavouring the food - so chargrills suit foods where char, grill marks and that flavour are wanted: steaks, chops, burgers, and grilled items. A salamander is an overhead grill - a heat source mounted above, radiating heat downwards onto the food beneath - so it cooks or finishes food from above by radiant heat. It is used mainly for finishing rather than primary cooking: browning, glazing, melting (cheese), toasting, crisping tops, and finishing dishes - jobs that need intense heat applied to the top surface. So picking the right heat is about matching the equipment to the job: a griddle for even, full-contact cooking of flat and delicate items; a chargrill for char, marks and grilled flavour on meats and similar; a salamander for finishing, browning and glazing from above. Many kitchens have more than one, because they do different things. And each has different cleaning implications, because of how it is built and how it handles fat: a griddle's flat plate needs regular scraping and cleaning of the built-up carbon and grease; a chargrill, with fat dripping onto the heat and open grates, generates heavy grease and carbon and is one of the messier, heavier items to clean, sending a lot of grease into the extraction; a salamander accumulates grease and carbon on its elements and surfaces from the food below. For cleaning, the flat solid plate accumulates cooked-on food, carbon and grease over service, and needs regular cleaning - scraping down the plate during and after service, and periodic thorough cleaning to remove the built-up carbon and grease that a flat cooking surface gathers. Grease also runs off the plate (usually to a trough or tray) and around the equipment, so the surrounding area and any grease-catching parts need cleaning too. A griddle is a workhorse that gets heavy use and builds up soil accordingly, so keeping it clean is a regular task - both for hygiene (it is a food-contact cooking surface) and to keep it working well (a clean plate cooks better than a carbonised one). So the griddle is the flat-plate, conducted-heat option: even full-contact cooking for flat and delicate foods, needing regular cleaning of the plate and its grease.
The chargrill
A chargrill (char-broiler, or simply grill in some usage) cooks food on open grates or bars set over a heat source - a gas flame, or heated elements, ceramics or char below. The food sits on the bars, over the heat, with gaps between the bars, so unlike the griddle's full contact, the chargrill applies heat mainly by radiation from the heat source below, with direct contact only along the bars the food rests on. This produces two signature effects. First, grill marks: the hot bars sear lines into the food where it touches them, giving the characteristic charred stripes. Second, the drip-flare flavour: fat and juices from the food drip down through the gaps onto the heat source, where they flare, smoke and vaporise, and that rising smoke and vapour flavours the food from below - the source of the distinctive grilled, chargrilled taste. So a chargrill suits foods where those effects are wanted: steaks, chops, burgers, sausages, and other meats and items suited to grilling, where char, grill marks and grilled flavour are the aim.
This is exactly what the griddle cannot do (no flame contact, no drip-flare), which is why a kitchen wanting grilled, charred results uses a chargrill rather than a griddle. But the chargrill's design - open grates with fat dripping onto a heat source - also makes it one of the messiest and heaviest pieces of equipment to clean, and the most significant for grease. The fat that drips down does not all burn off: a great deal of grease is generated, coating the grates, the interior, the drip trays and the surrounding area, and, crucially, being drawn up into the extraction system as grease-laden vapour and smoke. So a chargrill produces a heavy grease load - on the equipment itself (grates and interior needing thorough, regular cleaning to remove the caked-on grease and carbon) and in the extraction above it (which receives a lot of grease from the chargrilling and so needs regular degreasing). This makes the chargrill a focus for both hygiene cleaning (it gets heavily soiled) and fire safety (the heavy grease it sends into the extraction is a fire load). So the chargrill is the open-grate, radiant-heat, char option - great for grilled results, and the heaviest to keep clean and the biggest contributor to extraction grease.
The salamander
A salamander is an overhead grill: a heat source mounted above the food, radiating heat downwards onto whatever is placed beneath it. So where the griddle heats from below by contact and the chargrill heats from below by radiation, the salamander heats from above by radiation. This overhead intense heat makes the salamander suited mainly to finishing and top-surface jobs rather than primary cooking: browning the top of a dish, glazing, melting cheese (gratins, topping dishes), toasting, crisping or colouring the surface, and finishing plated items with a burst of top heat. It is the tool you reach for to put colour, crispness or a melt on the top of food, or to finish and reheat, rather than to cook something from raw through (though it can cook some thin items). So its role is often as a finishing station alongside the primary cooking equipment.
Because the salamander is used for these finishing jobs, it is picked when the job is to apply intense heat to the top of food - which the griddle (heat from below by contact) and chargrill (heat from below, and about char not top-finishing) are not designed for. So the three are complementary: griddle for flat full-contact cooking, chargrill for grilled char, salamander for top-finishing. For cleaning, the salamander accumulates grease and carbon on its elements, interior and surfaces from the food cooked and finished beneath it - splashes, drips and vapour from below coat it over time - so it too needs regular cleaning to remove the built-up grease and carbon, for hygiene and to keep it working. It is generally a lighter grease load than a chargrill, but still a piece of hot equipment that gets soiled and needs cleaning. And like the others, what it throws off contributes to the grease in the kitchen and its extraction. So the salamander is the overhead-radiant, finishing option - reached for to brown, glaze and finish from above, and needing its own regular cleaning.
Picking the right heat
Picking the right heat, then, is about matching how each piece applies heat to what the food needs. If the job is cooking flat or delicate items with even, full-contact heat - eggs, pancakes, breakfast, burgers, onions - the griddle's flat conducting plate is right. If the job is grilling meats and similar with char, grill marks and that grilled flavour - steaks, chops, burgers, sausages - the chargrill's open grates and radiant heat with drip-flare are right. If the job is finishing, browning, glazing, melting or crisping the top of food - gratins, glazes, melts, finishing plates - the salamander's overhead heat is right. So the choice follows the job: the same food might even use more than one (a burger seared on the griddle or charred on the chargrill, a dish finished under the salamander). Many kitchens have all three because they do genuinely different things, and a well-equipped line uses each for what it does best.
It is also worth noting that these are about the method of applying heat, and the right choice can be partly about the style and menu of the kitchen: a breakfast-heavy operation leans on the griddle, a grill house on the chargrill, and most kitchens value a salamander for finishing.
