Kitchen extraction cleaning - hidden grease
You wipe the canopy front daily and it gleams - so the extraction must be clean, right? Not necessarily. The visible canopy surface can look spotless while the parts that matter - the filters, plenum, ductwork and fan behind and above it - are grease-laden. Because the fire-risk grease is hidden, a clean-looking canopy isn't a clean system. Here is why. This is general guidance.
The short answer
A gleaming canopy is reassuring - but it can be misleading. The canopy you see and wipe every day is only the visible face of a system whose important parts are hidden. Why wiping isn't enough
